Ingredients:

  • 1 pound ground beef

  • 1 pound ground pork

  • 2/3 cup whole milk

  • 3 slices white bread, crusts removed (about 3 ounces)

  • 1/4 cup ricotta cheese

  • 1/4 cup grated Parmesan or Romano cheese

  • 2 eggs

  • 2 teaspoons Kosher salt

  • 1 tablespoon chopped fresh parsley

  • 2 teaspoons black pepper

  • 1 teaspoon dried oregano or marjoram

  • 2-3 minced garlic cloves

  • Approximately 1 cup of flour for dusting

  • 1/3 cup olive oil

Instructions:

  • Prepare the bread and milk mixture: Tear the bread into small pieces and soak them in hot milk until partially dissolved. Mash the mixture into a paste, then let it cool.

  • Form the meatballs: In a large bowl, combine the ground beef, ground pork, ricotta cheese, grated Parmesan (or Romano) cheese, eggs, salt, parsley, oregano, black pepper, minced garlic, and the cooled bread-milk mixture. Mix thoroughly with your hands until just combined. Form the mixture into meatballs and roll each in flour to coat.

  • Brown the meatballs: Heat the olive oil in a large skillet over medium-high heat. Once all the meatballs are formed, brown them on at least two sides. Do not worry about cooking the centers through, as they will finish cooking in the sauce.
