I don’t know about you guys, but I love food. I love to hunt for new recipes, try new flavors, cook new dishes, and just cook in general. It calms me. Recently, however, I have not felt like cooking during the week. I want something quick, easy, and takes little to no thought.

With that in mind, I am making an Unstuffed Pepper Casserole and Chicken & Rice for the week ahead.
